One of my all time fav recipes for the summer! Lemony Dill Chicken Quinoa Salad 🥗
2 boiled and shredded Chicken Breasts
3 cups of cooked quinoa
1 chopped bell pepper
1 chopped cucumber
3 chopped green onions
1 tbsp of olive oil
2 cloves of garlic
1/4 tsp Salt
1/4 tsp Pepper
1/2 tsp of lemon rind
1tbsp of lemon juice
1tbsp of dill
1tbs of honey
1/4 cup of crumbled goat cheese
1. Boil the chicken breasts for abt 20 mins then shred and cook quinoa for abt 12 mins at the same time in different pans, of course!
2. Chop all the veggies and throw them in your salad bowl you will use to serve.
3. Combine oil, and the following 7 ingredients in a small bowl.
4. Once all is cooked, put shredded chicken on top of the veggies, quinoa, and drizzle the dressing. Mix altogether! Then top with goat cheese.
5. EAT UP! 🍴
